Study Level 2 professional cookery as a set of decisions, not lists. The knowledge is sorted into families — heat-transfer methods, sauce types, named cuts, safety controls — and a single ingredient legitimately belongs to several at once, so revision has to train you to pick a member under stated constraints and justify the pick in two sentences. Actionable start: take five dishes you already cook and, for each, write which method family you used, what would change with the nearest alternative, and which safety control the workflow depends on. Dry heat or moist heat: sort methods by how heat actually travels
Every cooking method is defined by its heat-transfer medium: hot air or fat, water or steam, or direct contact. The medium caps the cooking temperature, and that cap decides browning, moisture loss, and texture.
Dry-heat methods — roasting, baking, grilling, deep and shallow frying — cook above the boiling point of water, which is why they brown: surface moisture evaporates and Maillard browning becomes noticeable from around 140 °C. A pale, delicate result points to poaching or steaming; a browned crust with a juicy interior points to grilling or roasting; a tender-but-rich result with sauce points to a combination method. When you write a justification, name the medium and its temperature ceiling — that is what separates an explained choice from a memorised one.

Matching the cut to the method: collagen sets the clock
Cuts differ in connective tissue, not in quality. Collagen-rich cuts need long moist cooking; tender cuts need fast dry cooking. Read the muscle's job in the animal and the method choice follows.
Scenario: a work plan calls for lamb shin, and a trainee grills it like a loin chop because 'grill suits lamb'. The tempting fix is shaking dry cornflour straight into the pan, and the mistake is built into the fix: dry starch clumps, tastes raw, and the sauce turns gluey or cloudy because the starch never cooks out evenly. The better decision is to reduce part of the sauce to concentrate it, or whisk in a cold-mixed slurry or beurre manié and give it a proper simmer. Each thickener changes finish and flavour differently, so name yours when you justify.
Temperature control inside the workflow: cool fast, reheat once
Bacteria multiply fastest in the temperature 'danger zone', so cooling and reheating are time-at-temperature problems. Divide hot stock into shallow containers, chill it quickly, and reheat thoroughly — once — before service.
Scenario: five litres of chicken stock are still hot at the end of the shift, so the pot goes on the back of the stove overnight 'to deal with tomorrow'. The plausible mistake is the volume: a covered pot that size holds heat for many hours, and time spent warm is exactly what lets bacteria multiply. The quantity was safe to simmer; the storage decision turned it into a slow-cooling, warm reservoir.
The better decision is to divide the stock into shallow containers, cool it with airflow or cold water so it passes through the danger zone quickly, then refrigerate and reheat it thoroughly — once — before use. What transfers to any version is the reasoning: minimise minutes held warm, and never reheat twice.
Named knife cuts: make a julienne that survives the ruler test
Classical cuts are size specifications: julienne is a fine matchstick, brunoise the fine dice cut from it, and baton and macédoine scale the same geometry up. Uniformity drives even cooking and presentation.
Exercise: cut a carrot into julienne, then audit ten strands against a ruler. Self-check rubric: the section should be square and a few millimetres thick; the longest and shortest strands should be within a couple of centimetres; the sides should be flat, not rounded; and trim waste should stay minimal. Expected observations on a first attempt: tapered ends, rounded sections and ragged lengths — the signature of skipping the squaring stage.
The fix is process, not speed: square the carrot into a stable block first, cut even planks, stack and cut even sticks — then dice across for brunoise. Repeat across three sessions and track two numbers: your thickest-to-thinnest ratio and your minutes per batch. When the ratio approaches one and the time falls without the ratio rising, the cut is becoming technique rather than luck. Save the trimmings for stock or a soup base so practice costs almost nothing.
From dish specification to work plan: mise en place as a map
Mise en place means every element measured, prepped and sequenced before cooking starts. Treat a dish specification as a scheduling problem: identify holding points, à-la-minute tasks, equipment clashes, and raw-to-ready contamination order.
Write the plan in three passes. Pass one lists every component with its method and its last safe holding point: braised items hold happily, roasted vegetables hold warm for a window, sauces need finishing at the last moment. Pass two sequences the equipment — one oven, one pan count — and flags clashes, such as two dishes needing different oven temperatures. Pass three overlays safety order: prepare vegetables before raw meat, or move through separate boards and wash between, so ready-to-eat items never meet raw contact.
Test the plan against a two-dish order where both mains need the oven: one roasted hot and fast, one braised low and slow. The naive sequence roasts first and holds the braise — reversed priorities, since the braise holds better. Cooking the braise first, roasting to order, and finishing both sauces at the pass keeps quality and timing intact. If you can narrate why each task sits where it does, you have turned mise en place from a checklist into the reasoning a professional kitchen runs on.
A four-week rotation for working cooks, with readiness checks
Rotate four session types weekly: family drills for classification recall, written two-sentence justifications, practical repetition of cuts and sauces, and a timed self-test. Keep sessions short and tied to dishes you actually cook.
Weeks one and two: run the family drills — for ten ingredients, name a best-fit method and one unsuitable method with reasons; rebuild the sauce matrix from memory; narrate cooling and reheating for one batch dish. Weeks three and four: shift weight to integration — write a full work plan for a two-course order, cook it, then score the plan against holding points, equipment clashes and contamination order.
